Annua`s Chef Director, Nácar’s bistro and Mexico-Asia fusion restaurant, Mexsia in Santander. Óscar Calleja has worked together masters as Juan Mari Arzak, Ferrán Adriá, Daniel García, Pedro Larumbe, and Toshiro Konishi, creator with NOBU of the Nikkei kitchen.
At the age of 20, ran a Spanish cuisine restaurant in Paris. In 2011, received his first recognition of his career, being awarded with “Cocinero Revelación” in Spain, awarded by Madrid Fusion.
His cuisine is a subtle remix of his influences, the childhood in Mexico, growing in Cantabria and the experiences of Asia.
Mexican cuisine accompanies him since he was a child, living in Mexico until he was 10 and his traveling spirit, has led him to strengthen ties with Asia (China, the Philippines, Japan, Thailand and Vietnam) searching new flavors to explore.
Óscar and his team have managed to place the Annua Restaurant at the height of the most important restaurants. Based on perseverance, excellence in each process, talent from the kitchen to the table, and a creativity focused on the wonderful experience that is Annua.
